E474 Sugar glycerides are a mixture of glycerol fatty acid esters and sugar esters of fatty acids (E473). The basic ingredient is soybean oil or other vegetable oils. Sucroglycerides belong to the class of flour improvers and emulsifiers.
The food additive approved under E474 is subject to maximum quantity restrictions. Products in which sucroglycerides are permitted include cakes, cookies, puff pastry, desserts, chocolate, coffee creamer, liquid coffee, confectionery, ice cream, dietary products, beverages and dietary supplements. In addition, sucroglycerides can be used as spreading agents for the wax coatings of fresh fruit.
